Popeye Was A Smart Guy!


Popeye, that nautical cartoon character, was a smart guy.  Spinach was his power food that converted his deprived-looking body into a Olympian muscle-man.

Spinach is a true super food. In my years of researching,various resources (books, magazines, articles, physicians) indicate that spinach is one of Mother Nature's greatest gifts to the human body.  As a firm believer in holistic and natural healing, food is a crucial part of my wellness program. Spinach is in my top ten list of foods.  Why?  Following are a few benefits I've noticed since adding this leafy green into my diet.

  • My doctor suggesed I add at least a cup of spinach daily to my diet to help avoid heart disease. Before eating spinach regularly, blood pressure was an issue I had to deal with. I wanted to avoid the synthetic, prescribed drugs. Now that I consume spinach, my blood pressure is back to normal (ranging from 129/78 to 112/61).
  • I read in many health-related sites that spinach is loaded with anti-oxidants.  I want to protect my body as best I can.  I feel that my diet full of anti-oxidants is one reason my tumor was confined to a small area.
  • Spinach supports a healthy intestine and stomach. Whenever I feel slightly bloated, I eat cooked spinach.  That removes that bloated feeling.
  • Do you ever feel anxious or nervous? On days when I feel slightly "pressured" a serving of cooked spinach helps relax my body.
The BIGGEST complaint I receive from people about spinach is, "It tastes so darn nasty!" It is an acquired taste. Yes, I'd rather snack on potato chips or eat bacon with eggs for breakfast, but I must be realistic!  I need spinach to help maintain a healthy lifestyle.

INGREDIENTS: Grape seed oil, garlic, onion, tomatoes, egg whites, spinach, bell pepper, fresh oregano, goat cheese.*
  • Sautee garlic, onion, tomatoes, oregano and bell pepper in grape seed oil.
  • Add spinach (amount added depends on how many eggs you are cooking) to the oil, garlic, onion, tomates. Cover pan for 2 minutes until spinach is cooked.
  • Add the egg whites to the vegetable mixture. Cover pan, and cook on low heat for about 10 - 15 minutes (depending on how many eggs you are cooking).
  • Flip the omelette over.
  • Add the crumbled goat cheese to the cooked side. 
  • Place lid on pan, and continue cooking on low heat for 2 - 5 minutes.
  • Enjoy!
NOTE: I did not specify adding any salt or pepper. This recipe is intended for people who are on a low-sodium diet. You may add pepper and/or salt to taste.
