The secret ingredient to my soups is ....


Have you ever tasted a meal made by two different people, and the results are very different? Both cooks may have used the same ingredients, but somehow, one dish far surpasses the other?

I have been perfecting and creating new "soups for the heart/mind/body/spirit" for the past thirteen years. Most people want to know what are the ingredients I use to create such unique masterpieces. Most chefs will not share their secret, but I will share mine. It's all in the love. Many people say grace before meals.  I pray while I cook!

EXAMPLE: I feel it is the intent of the prayer that makes a difference.  I pray for a person's overall health, and if that person is ill, I pray for full recovery during the preparation of the meal.  The preparation isn't limited to the time spent in the kitchen.  It includes the time and energy focused on selecting the freshest, organic produce combined with the finest of herbs and spices.


One of my most popular soups is a Puerto Rican favorite "asopao de pollo" (a thick chicken soup with rice).  There are several variations; here's the recipe to my basic chicken with rice soup. 

INGREDIENTS:
  one diced tomato
  one cup chopped onion
  at least four chopped garlic cloves
  organic sea salt (to taste)
  organic black pepper (to taste)
  one cup (or more if you like) chopped cilantro
  a teaspoon turmeric
  one cup uncooked, organic basmati rice
  two boneless, skinless chicken breasts

PREPARATION:
In large stock pot add a gallon of water, the chicken and all the spices. Bring to a boil, and simmer for at least an hour.  Once the chicken is cooked, remove from the mixture.  Chop the chicken into bite-sized pieces. Return the chicken to the soup, and add the uncooked organic rice. If you want the soup to be less thick, add more water. 

Continue cooking the soup for fifteen or twenty minutes.  Garnish the soup with peas or parsley.  As a side-dish, I enjoy my soups with "tostones" ... plantain fritters.






I ate this dish at least five times weekly while I underwent radiation therapy. I continue to prepare "asopao de pollo" weekly for strength and energy.
